This is a delicious Mexican side dish. The original recipe suggested serving it alongside chicken enchiladas. I'm not big on those, so I add meat by stirring in a pound of cooked ground beef before baking.
Mexican Casserole
4 cups cooked white rice
2 Cans cream of celery soup
1 (4 ounces) can chopped green chilies, drained and pureed in blender
1 cup shredded sharp cheddar cheese
1 cup shredded monterey jack cheese
1 cup sour cream
1 1/2 teaspoon garlic powder
1 teaspoon ground cumin
extra shredded sharp cheddar cheese for sprinkling on top
1 lb cooked ground meat (optional)
1. Mix together everything except reserved cheese for top.
2. Spoon mixture into a greased 3 quart baking dish.
3. Bake uncovered at 325 degrees for 20 minutes.
4. Top with cheese.
5. Bake an additional 5 minutes or until cheese melts.

We love eating casseroles made with cream soups and cheese, so this is going to be a hit. I even have some sour cream in the frig., so I can try making it for dinner tomorrow. I don't have the green chilies, but I think that's probably going to be OK.
